It is sourced from Stemmlers in Heidelburg. The birds are free run, raised without the use of drugs and antibiotics and are raised, shipped and processed in a low stress manner. The line of chicken from Stemmlers has some cuts that the new line does not have and the new line has some different cuts like "Chicken Supremes". Another advantage to both of us is that I will now be able to get fresh chicken deliveries twice a week. Stemmlers products will come in on Wed afternoons and the new "Air Chilled" chicken will come in on Friday afternoon. We will have fresher product to serve you every day we are open. So, what's the difference? Both lines of chicken are raised the same on Mennonite Farms. The difference is what happens in the cooling process after slaughter. Stemmler's chicken and most chicken are cooled by immersion in a tank of ice water. The "Air Chilled" chickens are removed to a large locker where they are hung and cooled by the circulation of natural fresh air. This process gives the birds a bit of hanging time to tenderize and the skin remains "au naturelle". The skin will look slightly yellowish or pale ivory - its natural colour and when cooked it browns more readily and tastes great. Because of the hanging/ageing the flesh has more flavour. This naturally "Air Dried" process is not to be confused with blast chilling. In blast chilling, the birds are given a misting of chlorinated water then exposed to below freezing blasted air. The birds cool quickly and the skin is frozen. By the time the birds reach the retail level the freezing is gone so you don't see it. The skin will be very white. When turkeys are blast chilled the freezing will go 1/4" deep. This artificially extends the shelf life. OK back to naturally Fresh Air Chilled Chicken, there are three cuts available that are not in the Stemmlers line: chicken supreme's, (see recipe in this paper) boneless skin-on breasts and bone-in skin-on thighs. I already have a number of customer asking for our new chicken cuts; you will need to try some yourself. This week we are featuring fresh Ontario lamb chops. Ontario lamb is much sweeter than the imported varieties. You owe it to yourself to try some loin chops on the BBQ. All those coyotes can't be wrong. There are only three more summer weekends; what do you want to BBQ? We can special order BBQ pigs, hips of beef etc. Call me. Next week August 25th thru 28th is a fresh salmon event. From the west coast we will be featuring wild Coho Salmon and from the Bay of Fundy on the Atlantic coast we will be featuring Atlantic salmon - the World's most popular salmon. We are also restocking wild pickerel, wild Halibut and wild shrimp. Our seafood is primarily Canadian; it is sustainable and environmentally sound. We do the homework and save you the guesswork. We have beef, chicken, pork, lamb & trout that are excellent in taste and tenderness and have been raised with care by local farmers or Mennonite farmers in Heidelburg without the use of hormones and anti-biotics.
